Well 1st thing I would get ahold of the local geo-planner and get an arial of your land. You may be able to look online to some of those "satalight photo" websites and get an overhead view of your land.

This will give you a MUCH better overview of your area and allows you to map out what you want to do on a scale.

If you have 25 acres, then you have enough land for a few different styles of fields. Plus if you have a stream running though the land that will allow alot of options for either mil-sim battles or give you a "rest" area for players and families like a food/rest area. Depends on the condition and pest factor of the stream.

But a speedball field only needs to be around 50 yards by 25-30 yards. So out of 25 acres, that can fit enough speedball fields. About 5 speedball fields should be enough, maybe 10.

Mil-sim/rec/Scenaro takes the most space and if you have woods and trees use those for those games. Im not sure what a good size would be for those games, but I "think" that one acre is 4840 square yards, you have plenty of space to play with. You could make up 3-5 rec/milsim/scenaro fields at 2-5 acres each.

So even with the fields you are only using 10-15 total acres, so that leaves alot of space for shops/food/parking.

It all depends on what you want to design, but to make it for only speedballer would be a poor choice only cause that only covers 25-40% of paintball as a whole. Though Speedball is the most "advertised" that dont mean that its the majority of the sport. Its advantage is very quick games (5-15 mins) VS rec/scenaro/mil-sim (1-3 hours).

But your 1st step should be:
Get an overhead printout of the land. (arial view)
Find out what scale that view is at.
Lay some overhead projecter sheets and lay that ontop of the picture
Then start to draw out your fields on that sheet, use dry erease or overhead projector markers.

This will let you map out and get a feel of what you want to do.

See where the fields will go, flow of the area, where to put the shops and everthing...
