I went to Maui at the begging of December/End of November, and just looking around on tourist sites and such, I found nothing paintball related, but using google and field locators I found things like this
http://www.paintballnews.com/fiedl&store/hawaii.htm which lists one in Maui, just search google for Paintball in Maui, or field locators, something will come up.
