If its lobsided or lopsided not sure what its spelled like...Basicly if its not perfect Round. The less round it is the less type of paint it is. Not every paintball is 100% perfectly round but you can be the judge of that comparing other balls.
When it comes to shooting, if it is inaccurate it doesnt necisarrly mean its bad paint. Alot of it has to do with The paint size matching your Barrel Bore size. For more info on that search the web or forums.
Also some people have talked about dropping one paintball on the ground about waist or chest height on lets say a hard floor and if it doesnt break its decent quality, becuase you dont want paint to be too fragile or it will break in your barrel. Also little dempels in your balls, if they are easily broken in your fingers or "soft" they can be concidered bad paint too.
