Can having little CO2 in your tank affect the accuracy...like put all kinds of weird spins on the ball?

no. not really, all co2 does is just not constant, so instead of having balls that shoot in the same general area, u might have some shoot really far, really short. or just really out of hand

Yeah, that's what I was meaning, was the out of hand part...so you would guess that it would be the CO2 that's making the balls go all over the place..?

no, not as much as you think, they still will go to the spot you are aiming at.

the next shot just might hit a slightly different spot than the last one

It will affect accuracy to the point that you have to lob your shots more because it messes with the velocity.
